Tuscan Salmon

Ingrédients
  

  • 4 salmon fillets skinless
  • 2 tbsp olive oil
  • Salt & black pepper to taste
  • 3 garlic cloves minced
  • ½ cup chicken broth
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • cup sun-dried tomatoes sliced
  • 1 tsp Italian seasoning
  • 1 –2 cups fresh spinach optional

Method
 

  1. Heat olive oil in a large skillet over medium-high heat. Season salmon with salt and pepper.
  2. Sear salmon 3–4 minutes per side until golden and just cooked through. Remove and set aside.
  3. Reduce heat to medium. Add garlic and sauté 30 seconds until fragrant.
  4. Pour in chicken broth, scraping up browned bits.
  5. Add cream, Parmesan, Italian seasoning, and sun-dried tomatoes. Simmer gently until slightly thickened.
  6. Stir in spinach (if using) and cook until wilted.
  7. Return salmon to the pan, spoon sauce over, and simmer 2–3 minutes. Serve immediately.

Notes

Don’t overcook the salmon—remove early and finish in the sauce.
If sauce thickens too much, add a splash of broth or cream.
